Paella, or rice dishes in general, are one of the most typical recipes of our gastronomy . It is the flagship dish of the Community of Valencia, with a multitude of variations and so widely used in the world. We start preparing the sauce. Finely chop the onion, bell pepper and garlic. Add a dash of olive oil to the paella and fry these vegetables over medium heat with salt to taste. When it is poached it is time to add the tomato, the peas and the bay leaf. Leave over medium heat for a few minutes.
While the sauce is finishing, cut the squid into bite-sized pieces and heat the broth in a saucepan.
Add the squid to the sauce and cook for 5 minutes. Now, add the rice and stir it for a couple of minutes to soak up the flavor.
Pour in the broth with the dissolved saffron and stir slightly to distribute all the ingredients. When it starts to boil you should lower the heat to a minimum and cook for 18-20 minutes without stirring. When there are a couple of minutes left, put the prawns on top and let them cook.
Let it rest covered with a cloth for 5-10 minutes and it serves to enjoy a good rice full of flavor.
